For a strong base
- 2 ½ cups of all-purpose flour
- 1 cup of powdered sugar
- ¾ cup of margarine
- 1 egg
- Water (if needed)
For an unforgettable filling
- 1 cans sweetened condensed milk
- 1 cup fresh lemon juice (200 ml)
- 4 egg yolks
For a nice whip cream
- 1 cup of egg whites at room temperature
- 1 cups granulated sugar
Mix flour, powder sugar and margarine in a bowl, and mix with fingers until it is crumbly. Add egg and knead until dough is firm and smooth. Stretch the dough to about 26 to 28 cm diameter and place in an oiled and floured pie plate.
Prick dough with a fork and place the pie plate in a preheated oven on 350°F for 10 to 12 minutes until lightly cooked.
Now, best important part (about the filling)
In a bowl, mix sweetened condensed milk with lemon juice and mix well. Pour over pre-cooked dough and place in the oven again, lower temperature, and bake for 10 to 15 minutes until the filling becomes firm and the dough is fully cooked.
And finally! (about the whipped cream)
Meanwhile, mix in a bowl the egg whites with granulated sugar and cook in a double boiler stirring from time to time until sugar is dissolved and thoroughly mixed. Remove from the double boiler and beat for 8 to 10 minutes until the mix triplicates in size and becomes foamy and glassy in texture. Remove pie from the oven and cover with fresh meringue in a decorative way. Let it cool and serve.
